Cod au Gratin

Cod is such as versatile staple fish. It is common to many parts of Europe (especially Spain and Portugal) and found frequently in recipes from the Canadian Atlantic coast.

This quick-dish recipes comes from fellow IC, Queensweater (Heather). Feel free to switch the cheddar with another cheese like mozzarella if your bladder has a hard time with cheddar.

Serve this dish with a big green salad or some steamed veggies for a hearty meal that is very quick to whip-up.

Cod au Gratin

3 tbsp butter (melted)

6 tsp flour

pinch of salt to taste

pinch of pepper to taste

2 cups milk

1 ½ - 2 lbs cooked cod fish

sprinkling of grated cheddar cheese or other cheese that your bladder can tolerate

Cook fish until flaky, about half an hour at 350 F. While it is cooking, melt butter in medium saucepan and slowly add flour.

Remove from heat, and then slowly add milk, salt and pepper until the sauce has thickened. Pour over the cooked fish, and sprinkle with cheese. Add to oven about 15 minutes.
